CUTS
The cuts come from either split or non split vanilla pods, intentionally cut into pieces, healthy and with good specific dry flavors and sometimes delicately roasted: dark brown colored for upscale cuts, reddish for the others. Their length varies between 3 and 5 cm with a maximal of 25% of water.
Whole split or non split vanilla pods that are less than 10cm are also considered Cuts.

| | Red US
Whole pods, split or not, healthy, dry, with good flavor sometimes with stains or numerous blisters, of reddish brown color, with a maximum of 25% of water, and a minimum length of 13cm.
Short: pods with the same characteristics but with a length between 10 and 12.5 cm.
In those vanillas, commonly called “Red Extraction” or “Red US”, apart from the vanilla characteristics you can also find flavors of leather, prunes and tobacco in the non split and red fruits in the splits.

Red EU
Split or non split vanilla pods, soft or dry, with a good flavor could have stains or various blisters, as well as some red nets with a maximum of 30% of water and minimum length of 13 cm.
Shorts: vanilla beans of same characteristics but with length between 10 and 12,5 cm.
In these vanilla beans commonly called “Red Europe” or “Red Soft” beside the characteristics of sweeter vanilla beans, one also finds flavors of leather, honey, wet wood especially with the non splits and the red sweet fruits with the splits.

| | Superiors
Non split vanilla beans, healthy and soft, of good flavor, could have some stains or various blisters, full, dark brown or chocolate colored with a maximum of 36% of water and a minimal length of 13cm.
In those beans commonly called “Superior” or “TK” apart from the sweet vanilla characteristics one can also find cocoa flavors, hot honey, and flowery wet wood in the non split and red sweet fruits and figs in the split ones.

Blacks
Whole pods, nonsplit, healthy and soft, of good flavor, could have some stains or various blisters, not exceedind a third of the length, full, of a uniform dark brown or chocolate color of maximum 38% of water and of a minimal length of 14 cm
